Some noob questions

Hi all,
I dropped from ~320 to about 260ish by mainly by just by having stopped eating crap on a regular basis and making an effort to eat better (green stuff and lean protein). After being stuck at 260ish for a while joined a gym. All is well and I am dropping again (~10lbs last month).
Anway, my questions ....
My heartrate is usually in the upper 160's when I work out. Most machines have the fat burning rate WAY below that. Am I doing myself a disservice going OCD when I work out or is the indicated fat burning rate a minimum? I am 40(ish) and weigh 247 today.
What are some calorie friendly snacks? I love almonds and other nuts, fruits, but don't want to end up at a wash from eating a lot so I can work out. I love my increased stamina, but I'm at the gym to shrink my gut most of all.
