I've been eating vegetables like a fiend. Roasted onions, roasted brussels, roasted pepper, roasted asparagus, roasted beets.... yumm.

Today's dish:
sliced yam, yellow onion, and grated smoked gouda in a gratin. So good (especially next to the brussels and onions.)

Any favorites?
