Low carb vegetarian recipe ideas

Hey,
Just wondering if anyone has any food/recipes for a vegetarian who is trying to keep their carb intake as low as possible?
Sounds crazy I know! I have been a vegetarian for many years and that's for ethical reasons rather than health reasons but the low carb thing is new. I really struggle to lose weight, always have done. I have seen personal trainers and doctors and had tests done and the general outcome is always I'm just one of those people that has to work unbelievably hard.
I was doing really well with the no carb thing, finally lost weight. Then I plateaued and now I'm putting on weight despite all my efforts. I know it gets harder as you reach your goal weight but I shouldn't be putting on. Looking through MFP I noticed that my diet is very high in dairy - cottage cheese, natural yoghurt and mozzarella. I did a bit of research and found out that could be the culprit.
I already eat nuts (in moderation), a handful of blueberries every day, vegetable stir frys and curries and salads. Getting a bit bored though so wondered if anyone has any ideas?

I get all my recipes from Pinterest. I'm vegan and don't necessarily follow a low carb diet but I am slowly reducing them. Gone from 50% to 40%.
