Need a Cheesy Cauliflower recipe

I love cauliflower with cheese. the only way I know how to make it is with kraft single and there's a lot of sodium in those little slices. So I was wondering if anyone has any low sodium recipe for this...thanks

    Options
    1 medium head of cauliflower
    2 tbsp butter
    1-2 tbsp heavy cream
    salt to taste
    2 tbsp light sour cream
    1/4 cup shredded cheddar cheese

    Cut the cauliflower into small florets. Boil in lightly salted water for 10-12 minutes. Drain well.

    Put in processor and pulse in batches
    add butter, sour cream and cream to puree
    Add salt to taste and serve with cheddar cheese on top
    Put in broiler for a few minutes to melt cheese or microwave

    This is low calorie (about 160-180 depending on the sour cream) per serving. The consistency is like mashed potatoes but with cauliflower. If you prefer a coarser texture. Add everything into the processor (except the cheese) at the beginning and only pulse enough to combine but not to puree. This should leave it a little more "cauliflowery".

    I make this for my fiance who is on Atkins and I love it too. It is a delicious way to have cauliflower and it's super easy.

    1 lg cauliflower, cut in to pieces, put in oven safe caserole
    2 tbsp butter/margarine
    1/2 cup each chopped red and green peppers
    1 cup fresh or canned sliced mushrooms (fresh so much better)
    1/2 cup veggie broth/chicken broth (homemade is much lower in sodium)
    1 cup shredded cheddar cheese
    1 can/homemade cream of celery soup
    3-4 tbsp low fat- low sodium ricotta cheese

    cook cauliflower just a tich so it's not as hard
    melt butter in skillet , add peppers and mushrooms cook until tender
    stir in soup, broth and ricotta, mix well
    stir in grated cheddar
    pour over cauliflower
    bake until heated through at 350 and cheese sauce is bubbly

    Trying steaming the Cauliflower then adding some chicken stock and garlic & herb laughing cow cheese, 1 - 2 wedges should do it. Then mash it all up and add a few green onions if you like. Super yummy!!
