Chia Seeds

Hello, does anyone use chia seeds in his or her diet? Wondering what people's experiences are with them since there are so many recipes available. Also wondering if there are any specific steps to prepare it before consuming - one site said you have to open them to gain nutritional benefit, the others don't mention that at all.

I use chia in sauces to thicken them up without butter or flour. I made a chicken gravy with low fat broth and chia seeds (ground) and no one suspected there was no fat nor flour added.

ETA I use it as a healthier replacement for thickening. I use ground simply because it is easier and you don't have to wait as long to absorb the liquid. They do not NEED to be ground.

That's a great idea! Can't wait to try it.

I sprinkle them whole over salads and into oatmeal and yogurt. They can end up looking a bit like black fish eggs if you don't grind them up when using them in something with liquid in it but if you don't mind that you can leave them whole.

I add a tiny bit to my smoothies (not a fan of the gelatinous texture they can take on, so I don't add much).

I've never tried it, but I know some vegans use chia seeds in place of eggs for baking. You soak 1 tbsp chia seeds in 3 tbsp water for about 5-10 minutes. It takes on the texture of an egg.
