Here is fast and easy one I plucked off a cooking channel:
Quick Braised London Broil with wine
Takes 15-20 minutes while you set the table.
One pan. Serving for four takes as long as a serving for one.
4 oz. lean London Broil, about 1 inch thick.
1/4 cup red wine (1/2 cup is enough if you are making 4 servings)
1/4 cup shallots (or plain onions)
1/4 cup assorted mushrooms (or bell pepper strips)
Salt and pepper
Fry pan that can go into the oven
Salt and pepper both sides.
Heat oil in pan to almost smoking
Brown meat for 2 minutes per side
Add challots and wild mushrooms
(We use onions and pepper strips)
Saute for a minute till a little translucent.
Dump in the wine, let reduce a minute
Put the pan into a 350 degree F oven for 10 to 12 minutes
Transfer to a plate and cover it with onions and mushrooms
Less than 300 calories per serving. About 40g protein.
