Makes about 32 cookies.

1 Cup Splenda Sugar Blend
4 Tablespoons Unsweetened Cocoa Powder
1/2 Cup Unsweetened Applesauce
1/2 Cup Peanut Butter
1/2 Cup Original Almond Milk
1 Tablespoon Vanilla
2 Cups Rolled Oats (I didn't use the quick cook oats and they turned out fine)

Boil almond milk, applesauce, splenda sugar blend for 2 1/2-3 minutes.
Take off heat.
Add peanut butter, stir until completely melted.
Add vanilla
Add oatmeal
Stir well
Spoon onto wax paper (rounded tablespoons, then flatten somewhat). Allow to cool/set for at least an hour, preferably overnight.

They have splenda brown sugar blend, which works well in recipes that call for brown sugar, but this is a blend of splenda and regular sugar.

Yes, a serving is one cookie - because they are quite rich tasting and pretty dense, I was pretty satisfied with just one.

Oops! Sorry - you should combine the sugar and cocoa together and add the mixture of them at once.
  • Girl you rock! Thanks so much for the info!!!!

    Yum

Can you use regular sugar instead of Splenda, I know it would up the cals and who could wait "preferably overnight." to give these a try?

    Thanks for sharing!!

Yes, you can use regular sugar, but you would need to double the amount as Splenda is sweeter than sugar. Have you considered using Stevia?

That is alot of sugar to substitute for the Splenda. I have heard of Stevia, but have never used. Thanks for the idea, I will have to check it out.
