Bring on the healthy chili!

Whos got a thick chili recipe that is pretty decent for you.. I know healthy does have a lot of good things in it, but it tends to have a dose of calories. How can we modify this delicacy :)

    1 lb lean ground turkey
    1 can reduced sodium kidney beans
    1 can diced tomatoes with lime & cilantro
    1 packet chili seasoning (or concoct your own)

    brown ground turkey in skillet, drain & rinse. Return to skillet. Add everything else. Simmer 20 mins. Serve with low cal organic chips and fresh salsa
  • Pumpkin chili!!!!! I know it sounds crazy, but it is soooo awesome. My husband makes it, not really a recipe, but he just uses cut up small squares of pumpkin instead of meat (since im a vegetarian) and then just adds lots of beans, lots of mushrooms, tomatoes, chili seasoning.

    He says that he googled easy vegetarian chili, picked one that he like, and then adapted one that sounded good so that it would have pumpkin and mushrooms. The mushroms kind of give it a meaty texture if thats important to you. He thinks that it was on cooks.com that he found the base recipe.

    I have a recipe for white bean chicken chili under my recipes. My husband says he also adds cumin and chili powder (he's the cook, not me).

    Mine is similar to this plus add 1 lb of turkey sausage 2 cans of black beans I use 2 cans spicy Rotel and Wick Fowlers 2 alarm chili kit.

    careful not to add to much water you can always add more to thin it out.

    I figured this up last time and it made just shy of a 6 Qt crock pot. Thats 24 cups @ 100 calories a cup (its a little high in sodium but I dont add all the salt probably could eliminate completely)

    1/2 block of extra firm Tofu crumbled and cooked in a non stick skillet unil you reach the consistency of scrambled eggs.
    Season with
    1 tbsp paprika
    1 tbsp cumin
    1 tbsp sage
    1 tbsp McCormics perfect pinch Basil and Garlic
    Red chili powder or red pepper flakes to taste
    salt and pepper to taste
    In seperate skillet sweat down ingredients below in the order they are listed due to cooking times
    2 tbsp olive oil
    1 sm onion
    1 sm chili pepper(optional)
    1/4 each green,yellow,orange and red bell peppers
    2 cloves garlic
    after all veggies are soft add in
    1 can tomatoe paste
    2 sm cans tomatoe sauce
    1 tsp italian seasoning
    2 dashes Lousianne hot sauce
    combine the ingredients of both pans
    add 2 cups homemade(preferred because you control the fat/meat/sodium) or canned beans and simmer 1/2 hour.
    Serve alone or over rice or Frito's!! (splurge)
  • Ground Chicken (season with garlic, onion and adobo and cook with a whole diced onion)
    Kidney beans
    Hunts fire roasted tomatoes
    Pureed tomatoes
    Roasted sweet red peppers

    Chili seasoning of your choice

    This makes some real good chili.

    This one is very tasty. I entered it in a chili contest and won honorable mention. The roasted eggplant have a meaty texture and the cumin gives it a savory flavor.

    1 lb Ground Beef (97% lean)
    2 cans Chili Beans
    2 cans Diced Tomatoes with Green Chiles
    3 Green Bell Peppers (diced)
    2 Onions (diced)
    Chili Powder
    Garlic
    Red Pepper
    Salt
    Black Pepper

    Brown meat and seasonings, add green peppers and onions until they're softened a bit, then add chili beans and diced tomatoes and thin with water a bit. Simmer together for 30 minutes or longer. Serve topped with shredded cheese, diced onions and Fritos. :)

    • Crushed Tomatoes 20 ounces
    • Pureed Tomatoes 14ounces
    • Zucchini, 3 cup, sliced
    • Celery, raw, 1 cup, diced
    • Jalapeno Peppers, 1 pepper, chopped
    • Green Peppers (bell peppers), 1 cup, strips
    • Onions, raw, 1 medium (2-1/2" dia)
    • Chili powder, 1 tbsp
    • Pepper, black, .25 tsp
    • Garlic powder, 1 tbsp
    • Granulated Sugar, 1 tsp
    • Pepper, red or cayenne, 1 tbsp
    • Chili Beans, 1 cup

    grown meat - remove from pan
    saute veggies
    add meat back in and all spices
    mix well
    cover for an hour (no heat)
    place in the crockpot w/ beans and tomato items
    cook on high for 4 hours.
