Low Calorie Count Warning?

I have recently started tracking my intake in order to lose weight I've put on in the last year. Before, I would get full meals and eat until I was absolutely stuffed, because I felt bad leaving food behind. I have no idea how many calories I would consume, but it felt like a ton and was very low quality food.
Now, I've switched to healthy snacks (fruits, lowcal, etc) and realised that I don't have to eat until I'm all stretched out. However, now I am constantly getting the warning saying I have not consumed enough and will likely enter "starvation mode".
When I gained all the weight, it coincided with me coming off of my ADHD medication due to elevated stress. Something I did not realise is that many ADHD medications also act as a diet suppressant/weight control medicine to a certain extent. So after I stopped medication, I started eating much more than before and gained a bunch of weight because I was always hungry.
Now, I have switched to a different medication that has a much better effect on my stress level, yet it still has the diet suppressant effect.
My schedule is something like this:
Wake up ~9, have a glass of water and my medication.
Have a sandwich around 11-12.
Get hungry around 4, maybe eat an apple or a few handful of nuts.
Eat around 8.
Go to bed 12-1.
I ate three small soft tacos about 2 hours ago, and I'm not hungry, but I'm not full and I definitely don't feel starved. I'm trying to listen to my body and eat when I'm hungry unless I'm really busy, so that's why I'm really confused as to why my numbers say I'm eating a dangerously low amount.
