Roasted peppers -- ideas

Was at the farmers market this morning and picked up roasted peppers. I think they're Anaheim. Not sure, but they're not bell peppers. Got mild instead of hot to keep hubby happy. Had half a one cut up over the veggie tamale I got there.

I'm never quite sure how to process these. I scraped as much skin and seeds off of it as I could and chopped it up.

I can make salsa or chili from this, but any other ideas? I have a quart bag stuffed full of them.

    What you need is a passel of New Mexico cooks. I have an army chaplain friend who roasts herself a bushel of Hatch chiles to last the year. She was so worried she'd miss chile season when she was stationed overseas, she had a friend in New Mexico ship 40 pounds of chiles to me to roast and freeze for her so she'd have them when she got home. Google "new mexico hatch chile recipes" and you'll find a bunch of suggestions like for a chile infused cranberry sauce, chile apple pie, etc.

    When you say roasted - have they already been roasted? I wouldn't expect them to have skin or seeds if that was the case.

    Make a tuna salad - one tin of tuna, drained, one choped roasted pepper, handful of spinach, good dollop of salsa. Chop everything well together to combine.

    They're already roasted, but they're not the cleaned-up red peppers like you get in the store. They're a green pepper, roasted whole and the charred skin is still on them in bits and pieces. In years past, people have roasted them at the market in big rotating cage things. When they roasted them there, it always smelled a bit like someone was smoking something they weren't supposed to. ;-)

    The tuna thing sounds good. I'll have to try that. Nice to do something with tuna other than my usual yogurt/mayo blend.

    acpgee - I have some jarred roasted red peppers, too. I'll have to take a look at those recipes for those. The roasted red pepper sauce sounds amazing, although I'm wondering if I could get away with using whole milk yogurt instead of sour cream. Sour cream is just one of those things I never buy.

    Blend some in hummus and garnish with some chopped ones. They sounds great, I've never seen roasted peppers at farmer's markets (and I'm in CA :)

    eta - or what about chile rellenos. yum.

    Lovely blended in hummus, although I can see I've been beaten to the punch :)

    I used to slice them and add them with meat and sauce to pasta too. Also nice in an omelette, and probably in a tomato salsa too, as one of my favourite salsas was a roasted red pepper one :)
