Healthy lunchbox protein idea for my almost-vegetarian son

My eldest just started school, and I need some healthy lunch protein ideas.
He likes meat, but really just grill meat (steak, pork chops, chicken breast, salmon). He doesn't much like deli meat of any kind (I've tried), nor sandwiches (unless just jelly and bread). He doesn't like peanut butter (I don't see how this is possible, but I've never gotten him to eat it). He likes black beans.
He's really a fruititarian. He would eat his weight in melons if I let him.
I've sent leftover grilled chicken from the night before, and I guess I could pre-cook chicken or pork chops or whatever a day or so in advance, but I was coming here to see if anyone had other suggestions.

Yogurt, cheese, had-boiled eggs. Black beans and rice with cold leftover chicken. My 10yo took rice, black beans, chicken and peppers in a thermos bowl today.
ETA: Two of my kids will eat salmon out of a can(really a plastic canister). Also, It is totally easy to just cook extra chicken and if he'll eat it everyday, that's fine.0 -
Does he like cheese? You could roll black beans (lightly smashed, so they don't just fall out) in a tortilla, with some cheese and lettuce or diced tomatoes. you could also make pita pocket sandwiches with hummus (or just lightly smashed garbanzos), if he'll eat that.0
