Hearty and filling, this kidney bean salad is simple yet beautiful and delicious. It’s packed with fiber and protein and makes a wonderful Weight Watchers side dish for lunch or dinner.

Ingredients

2 15oz cans kidney beans, drained and rinsed
1 medium red onion, diced
1 large red bell pepper, seeded and diced
1 large yellow bell pepper, seeded and diced
1 cup parsley, chopped
1 tbsp olive oil
2 cloves garlic, minced
Juice from 2 lemons
Salt and pepper to taste
I also add chopped celery


Instructions

Place beans, peppers, onions and parsley, and celery in a large bowl
Add in olive oil, garlic, lemon juice and salt & pepper. Toss to combine.
Preparation time: 10 minute(s)

    As an alternative skip the lemon and garlic and switch from normal olive oil to truffle oil!

    I make something similar, though the vegetables differ based on what I have in the fridge. No crunchy vegetable is safe - radishes, carrots, peppers, etc.

    And I vary the beans as well, sometimes using more than one. And I usually spice mine up a little more with some hot sauce and fresh herbs in the dressing. Or perhaps add some hot pickled vegetables (I do a lot of pickling).
