Recovering bulimic here to kick fat's *kitten*

Howdy all,
I'm a life-long fatty, from intolerances giving me a swollen belly as a baby to full blown obesity as a grown-up (because we all know that a BMI over 30 means obese, an ugly word but a true one). I was a bulimic as a teen. I kicked the purging all by myself but I've been diagnosed with Compulsive Overeating Disorder and I think I realize now I will have to be on guard against binging my whole life. But I will beat it.
Recently I started most of my own cooking from scratch and that's had a lot of positive effect in my health. It's not any particular diet like 5:2 or paleo but a set of a few simple rules that work for me. I've realized the tastiest thing in life is my Mediterranean Vegetable Bake (peppers and zucchini baked in chopped tomatoes and topped with a handful of low-fat salad cheese).
I starting swimming in May. Since then I've lost five pounds and more impressively, four inches off my waist (more inches from other measurements). I've joined a gym and had an intro program made for me to get me into regular phys. It's tricky because I'm injury prone due to the extra weight. I've had tendonitis in one foot, a stress fracture in the other, you name it. Still I am determined to proceed.
Looking for accountability, people who have maybe been there with an eating disorder, advice for getting fit for the accident prone. Good luck everybody, let's enjoy the sweat together.

that vegetable bake sounds tasty... how long does it need in the oven?0

Well done on the progress you have made so far, both with battling your demons and the weight loss you have had already!
I have not been where you with regards to eating disorders, but heck I am accident prone and great at falling off things. Just the other night I fell out of bed whilst trying to get in it, how does that even happen?! Lol.

that vegetable bake sounds tasty... how long does it need in the oven?
My Med-Veg Bake recipe:
-chop an onion and some bell peppers, soften in a pan (oil or not, whatever you like). Feel free to add other garden favorite; I put in mushrooms and sometimes I grate a carrot or some finely sliced celery too. Add a couple of cans of chopped tomatoes til you have a very wet spaghetti sauce type thing. You can add sundried tomatoes too, and I put in lots of rosemary and sage and black pepper.
-finely slice zucchini and then layer it in your baking dish like it's a lasagna- sauce, zucchini, sauce until you hit the top. Crumble on some low fat salad cheese or feta to the top (you can do some in the middle too) and bake it for oh, say 45 mins or until the zucchini are cooked soft. Ladle out and enjoy totally guilt free food that tastes almost like a real hearty Italian meal with no pasta and very little cheese.
I used to be addicted to ravioli but this is my new fix.0 -
