Any good mac&cheese recipes out there? I am currently hooked on using miracle noodles (miraclenoodles.com) for any pasta dish so that's what I'm using for the noodles. Zero cals. :bigsmile: Any neat and yummy recipes as far as the cheese and fixins are concerned? Thanks!

They're shirataki noodles. Some sort of plant/vegetable. On the site somewhere it explains it a little better and has a pic of the plant. I have found multiple recipe sites that use them and they were honored on some tv show. Apparently they really are a miracle, as they are calorie free, carb free, wheat free, and gluten free. No taste but absorb whatever the flavor of the dish is you are preparing. Made mainly of soluble fiber so it aids in the digestion process, keeping you fuller longer.0 -

As for the cheese part, I've been making my cheese sauce with a combo of broth and 2% milk. Cuts down some of the cals. I have also used 2% cheese and my kids who love my mac and cheese haven't noticed at all.0 -

No problem! And I had read on another post a couple weeks ago about these noodles. Went directly to the site and purchased 'em. They're great!!0 -
when I make my cheese sauce for mac and cheese I do a typical roux (butter and flour) or some times I use cornstarch in chicken broth, NO MILK. I figure the cheese I put in it has enough and it's always creamy, you would never know that there isn't any milk.0
