Excess calorieeees.

When exactly does your body start storing excess calories? Is there a certain time frame you have to burn them?

    I don't quite understand.

If you regularly eat over your maintenance needs, you will gain weight over time. The more you over-eat, the more quickly you'd gain weight (assuming you keep eating the same size of surplus as you gain weight and your caloric needs increase with increased weight).

I don't think it works quite like that. It's just your long term eating behavior that makes the difference. Some of what you eat converts to sugars in your blood stream rather than fat for quicker use. Once you've run out of that your body has to draw on fat reserves if you're not taking in enough food to fuel your burns - burn rates including just living not only exercise.
