Chicken Cacciatore with Mushrooms
Servings: 6

Ingredients
2 lbs boneless, skinless chicken breast, cut into larger chunks
1 large white onion, thinly sliced
2 celery stalks with leaves, diced
4 tbsp. tomato paste
14 oz. fire roasted tomatoes
1 lb. sliced mushrooms
1 bell peppers, chopped
4 garlic cloves, sliced
1 tbsp. Italian seasoning
1/2 cup red wine (or chicken broth)
1-2 tbsp. capers, drained
Up to 1 tsp. red pepper flakes
1 cup black olives
Instructions
Add everything except the chicken and olives to the slow cooker. Stir together.
Season the chicken with salt and pepper. Add to the slow cooker..
Cook on low for 4-6 hours. During the last 30 minutes or cooking, add the black olives.
