What are your favorite crock pot recipes?

I have a few go-to ones of my own but I'm looking to add more to my repertoire. :wink:

For someone with a busy schedule (like myself) using a crock pot frequently is a no-brainer, so I'm sure all your feedback will help more than just me. Thanks in advance! :flowerforyou:

    Butternut Squash soup

    Chicken Broth
    1 butternut squash (large), peeled, seeded, and cut into 1 or 2 inch cubes
    (all spices to taste!)
    Garlic powder
    ground ginger
    salt
    pepper
    brown sugar

    The broth you add after the squash is dumped into the crockpot, fill it all the way up! Add the spices, set to low for 8-10 hours. Mash with spoon or strain into blender, blend until fine, mix back with strained liquid, add dollop of light sour cream and enjoy!
  • Mine is Mustardy Pot Roast from a Weight Watchers cookbook I have kicking around. I don't even do WW, but someone got it for me and that recipe is awesome.

    Combine 3 tbsp flour, salt and pepper in a small bowl, dust 1 tbsp of the mixture over the roast and brown it. Pour the rest of the flour mixture over veggies (I use whatever I like).
    Combine a can of cream of mushroom soup, 1 tbsp whole grain mustard and 1 tsp italian herbs. Put the roast on the veggies and pour the soup mix over the roast. Cook on low 10-12 or high 5-6. Easy as pie!

    I'm not a fan of the potatoes, carrots, onions/celery roast veggies, so I do it differently. Last time I put in zucchini, mushrooms, carrots and leeks and it turned out fabulously! It's super tender.

    I am also looking for some new ones! I do the same old same old pot roast and pulled pork, but they are kind of blah and not too healthy! I would love some healthy tasty recipes. Lots of ones from the cookbooks I've tried come out where the meat is kind of stringy and tender but dry and tasteless. So I am looking for everyone's favorite tried and true go-to recipes :-)
