So currently my daily comsuptiom of food is a foot long from subway with all the veggies except olives because they are nasty. And then snacking on popcorn and eating a granola bar. A banana and peach. and a small lunchable. I don't really want to go to subway everyday, and want to make stuff at home, but since I don't know what to make i'm kinda left in the dark. I usually consume around 1300-1500 calories a day.

Start simple by baking some chicken, and steaming some veggies perhaps.
How fancy are you looking to get with making stuff at home?0 -

How fancy are you looking to get with making stuff at home?. I wouldn't be against planning the meals ahead of time for the rest of the week on my day off.

That does make it harder. DH is in school as well, and on days he has class he doesn't have time to heat leftovers up, so we're trying to figure out something too. I typically cook for a family of 4 and try and have leftovers for lunches, unless I know it's something that won't save well (or get pigged out on).
Maybe try doing some things like chili in the crockpot, you can freeze excess and have a number of meals ready to defrost when you need it.
The grilled/baked chicken could be cut up and put into a salad with a bunch of extra veggies cut up and put in it.
Make your own "lunchables" at home and add in fruits and veggies too so it's well rounded.0 -
Breakfast is usually cheerios, scrambled egges with Turkey bacon, or plain instant oatmeal. For the afternoon i vary chicken breast with rice and some steamed vegetables is easy to make maybe make a simple sandwhich at home. Then you can always buy some tv dinners i.usually get the healthy choice ones.0

really quick way i used to use when i was a student.
Write down 5 meats or fish,
write down 10 veggies
write down 5 sides (pasta, potato, rice, etc)
then cut them out, place in 3 piles face down and then pick one from each pile.
you have your meal.
if you take into account which foods are readily available in your local shops then you can find them easier, especially if some of them are prepared partially.
also.. once youve done it.. your new piles of 3 become your shopping list.
just an idea0 -
