Main meal help?

Okay so.. I have to cook a three course meal tomorrow for my boyfriend (so doesn't need to be amazingly impressive but still nice) and I'm stuck for main course. I already have fairly healthy starters and dessert planned but the main has stumped me.
We always eat chicken to I was leaning more towards pork and am going with an italian theme (because that's all i know how to do haha) and have a healthy dauphinoise potato to go with it.
Anyone got any fancy but easy and fairly healthy pork or fish recipes?

Slow cookers work very well and keeps the heat down in the room and can be left on while you are at work or in school. My daughter buys package spices with an Indian flavor, adds content of meat, veggies then it takes only 20 min for rice when you get home. That way you control fat content and veggies you like.0

I'd love to be able to make more slow cooked dishes but I like slow cooked meat and in a household where your parents are vegetarians the smell of slow cooking meat all day is banned (even though a month ago they loved it!) not as keen on slow cooked anything else really0 -
I'd do a fish fillet wrapped in paper or foil - en papillotte. You cna add a splash of white wine or a slice of lemon, some thinly sliced carrot or peppers. Any white fish would work, salmon would be a bit special, if you can find it go for trout fillet.0

I marinate pork tenderloin in apple juice concentrate, dijon mustard and rosemary for a few hours and then throw it on the grill or roast it. You can also go a bit more italian by rubbing it in garlic, olive oil and rosemary.0

Silly question but does it taste like apple though? Don't like hot apple taste too much0 -

I love apple, so it's hard to say for sure. To me, it's just a nice sweetness. You could probably substitute honey and maybe a little vinegar....0 -

Looks really nice! Might just have to try this one day, but probably not with quite as much apple just in case ;P0 -
I like pork tenderloin rubbed down with equal parks honey mustard and stone ground mustard, plus some salt, pepper, and Italian seasoning. Let it marinate a while, then roast and slice. So yummy and very healthy. Should go well with those potatoes too.0

I'd give the fish 25 mins or so - check it to see that it's opaque and is flaking .0

Take boneless pork chops. Pound 'em thin. Make pork Marsala. If you don't have Marsala -- any sweet sherry, vermouth, or port will give a similar effect. Use any marsala recipe on the web. It'll be wonderful next to your dauphinoise. Or back off on the creaminess of the dauphinoise and do a galette instead.0

Balsamic Pork Chops
Boneless porkchops (not too thin), sear them in a hot pan until lightly browned on both sides, remove from pan. Add to pan these whisked ingredients:1/2 cup of good balsamic vinegar, 2 TBS honey, 1 TBS Dijon mustard, and salt and pepper and cook for about 30 seconds. Add pork back to pan and continue cooking (turning pork often) for about 15 minutes. Don't over boil the liquid or it will burn, but you do want to reduce it down until it's thick and syrupy. I add some fresh or dried rosemary in the last couple of minutes.
This recipe is so simple and taste so rich and yummy!! I will often make more of the glaze to drizzle over roasted veggies as a side dish. :happy:0 -
