Breakfast: Huevos Rancheros

Here's a easy, yummy, and very filling breakfast treat for less than 250 calories.

Huevos Rancheros

1 large egg (70 cals)
1/16 (a smidge) tsp butter (20 cals, can use olive oil instead but I think butter cooks eggs better)
1/4 cup Amy's Organic Refried Black Beans (70 cals - can use any other bean)
1 corn tortilla (55-65 cals, depending on brand)
Lettuce (freebie)

Optional:
1 tbsp sour cream (30 cals)
Salsa (minimal)
Avocado
Tomato

In small skillet, spray Pam and heat corn tortilla until it gets slightly crisp. Remove.
Add tiny pat of butter to skillet. After it melts, add crack and add the whole egg. "Fry" it until desired. I like mine cooked on both sides, but the yolk inside still just barely runny so that it pops with the fork when I eat my dish.
Microwave beans and smear onto tortilla. Top w/ egg, lettuce, and whatever additional topics you'd like.
