Yummy recipe to share

I made up a really quick and easy recipe tonight and thought I'd share!

Mushroom Chicken Pasta

Add to sautee pan and heat over medium until margarine melts:

1 Tablespoon Smart Balance
1 chicken boullion cube
1/2 cup water

Add and cook until mushrooms are wilited:

1/2 package of thinkly sliced Baby Bella mushrooms
3 large cloves garlic, finely minced or put through a garlic press

Add and cook until chicken done:

1 large boneless, skineless chicken breast sliced into strips

When finished cooking (be sure not to overcook meat!) add:

2 oz. low fat cream cheese.

Be sure to only heat long enough to melt the cheese, or it will curdle if it boils. Serve over Barilla Plus angel hair pasta.

My husband and I each had 1 cup of cooked pasta and split the sauce/meat. I served it with a tossed salad with fat-free dressing and it totaled about 500 calories. It was a huuuge amount of food, and I actually wasn't even able to finish all the pasta.

Just wanted to share because it was soooo easy and good and my husband said it was "bad *kitten*"! lol
