This might be a dumb question..

Can you really do stretches to lengthen and make your muscles appear more "long and lean" like the ideal "dancer'a body", as opposed to a slightly bulkier/athletic body shape? Just wondering.

You can't change your height or the length of your muscles. But something like Pilates can help to correct poor posture & spine alignment.

You can't make them longer but most people (me included) have bad posture and it can "correct" it to its regular length :)

I think pilates is a good one!!!!

Also I heard running is supposed to really good to slimming them down. Its all about getting your BF % down to make them look leaner.

If your doing weight exercises, and they are appearing bulky - Maybe you might want to up your cardio instead : )

I am not sure about lenthening, but yes as you become lean you tend to "appear" taller.
And no amount of lifting can make you bulky. What makes you bulky is bad eating.
