Low Cal Dessert Recipe Help!!

Alright, I'm calling all bakers to give me a hand!!
I'm making desserts for different Christmas dinners, and need some low cal recipes!! I'll be searching for them through the posts as well, but if anyone has any baking tips or recipe tweaks that will help that'd be so greatly appreciated!!
I hope to make:
Peppermint Chocolate Cupcakes (chocolate cupcakes filled with peppermint icing, with peppermint icing on top, sprinkled with crushed candy cane)
Sugar Cookie Cady Canes (dying half a batch of dough red and twisting the white and red together to make candy canes)
I'm probably going to make huge batches of both, and split them into 3 different desserts.. If I'm going to eat dessert, which is inevitable, I'd love to bring some low cal options!

I don't have the exact ingredients, but I saw a recipe for Candy Cane pudding dessert (if only I had printed the darn thing out!). The basics: use a glass trifle bowl if available. Make a small bottom crust from crushed graham crackers, Splenda & non-trans butter spread, make vanilla or white chocolate fat free pudding w/fat free milk (2-3 boxes?), divide in half, add some red food coloring to one half (will only make it pink) and a 1-2 drops of peppermint oil flavoring to the other half. Spread the "white" pudding on top of the crust, drop spoonfuls of the pink pudding on top. Take a knife and slowly swirl it in the bowl to streak the pink pudding through the white - don't mix too much or you end up with all pink pudding. Cover with fat free cool whip, sprinkle the top with crushed candy cane. Looks pretty & not too bad in calories per serving.0

I wish I had time to mess with those recipes for you (I love messing with recipes to make them healthier) but I am too swamped right now. However, look at this website for a few easy tips to make cookies healthier:

I always use applesauce in place of oil, but it doesn't work quite the same for butter (although with melted butter, you can usually at least substitute half).0
