I just ran across three jars I forgot about, they have been fermenting since late June. I know the tea is bad (unless I need vinegar) but how do I tell if the scoby is ok? It's really thick and it looks fine except for the very bottom which I can peel away and discard. I don't want throw it out if the scoby is good.
