So I have 2 huuuuuge bags of uncooked potatoes left over from our Christmas dinner prep. I was thinking of making potato wedges/fries (baked) since i know my kiddos will eat them.

Anyone have a yummy healthy recipe???

I've taken potatoes, cut them up into wedges, and tossed them with some olive oil, tiny bit of sea salt, pepper, and rosemary. You can probably omit the rosemary if you wish, I just love the flavor it brings!

They are quite delicious just baked with some olive oil and salt!

I do this too. For me, the salt is the key. Good sea salt or at least coarse kosher salt, but you don't want the fine table salt. Freshly cracked pepper is nice too. :)
