I made these today. Basically taking ingredients from a protein muffin recipe and a protein pancake recipe and making something of my own. I made mine into 6 muffins, but they spilled over in the oven, so this recipe makes 8.
High-Protein Muffins - 8 muffins. 9g protein/100calories
Ingredients:
• 2 eggs
• 5.3 oz Vanilla Greek yogurt Dannon Light and Fit
• 1/2 cup Heart Health Bisquick
I suppose you can use any type of flour, but this is what I had on hand
• 2 servings protein powder
I say servings instead of scoops because all powders are different
• ¼ unsweetened almond coconut milk
Milk works too
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tbsp butter (optional)
You can use cooking spray
• 1 banana (Optional)
• Add whatever else your taste buds desire
Make It:
1. Preheat oven to 350°. Spray muffin tray with cooking spray.
2. Blend all ingredients together until smooth and divide among sockets in tray (usually 8).
3. Bake until you can insert a fork and remove it without anything sticking, about 17 minutes. Top muffins with Greek yogurt.

Thanks for sharing will definitely have to try, for just a 100 calories that's awesome and I like that you can basically add any flavor you like0

No problem Misty. I think they came out delicious!!
It's nice to have protein options instead of a Quest bar or shake all the time.0 -

Sorry yours didn't have much flavor. Did you add anything else? My protein powder is S'mores flavored so mine took on that flavor.0 -
Yummy thanks.0
