High-Protein Muffins

I made these today. Basically taking ingredients from a protein muffin recipe and a protein pancake recipe and making something of my own. I made mine into 6 muffins, but they spilled over in the oven, so this recipe makes 8.

High-Protein Muffins - 8 muffins. 9g protein/100calories

Ingredients:
• 2 eggs
• 5.3 oz Vanilla Greek yogurt Dannon Light and Fit
• 1/2 cup Heart Health Bisquick
I suppose you can use any type of flour, but this is what I had on hand
• 2 servings protein powder
I say servings instead of scoops because all powders are different
• ¼ unsweetened almond coconut milk
Milk works too
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tbsp butter (optional)
You can use cooking spray
• 1 banana (Optional)
• Add whatever else your taste buds desire

Make It:
1. Preheat oven to 350°. Spray muffin tray with cooking spray.
2. Blend all ingredients together until smooth and divide among sockets in tray (usually 8).
3. Bake until you can insert a fork and remove it without anything sticking, about 17 minutes. Top muffins with Greek yogurt.

Thanks for sharing will definitely have to try, for just a 100 calories that's awesome and I like that you can basically add any flavor you like :)

No problem Misty. I think they came out delicious!!
It's nice to have protein options instead of a Quest bar or shake all the time.

Blend the Greek yogurt with everything else. I meant to delete the on top part.

Okay so I got a chance to bake these today.. I used wheat flour instead. I thought it didn't have too much taste to it...maybe it's the wheat flour?????

Sorry yours didn't have much flavor. Did you add anything else? My protein powder is S'mores flavored so mine took on that flavor.
