Crock Pot Recipes

I got a crock pot for christmas....but the only think i know how to make in one is roast. LOL

Anyone have any healthy, lean recipes for use in a crock pot??

    This is really good if you like spicy things. Use in tortillas, or bake some corn tortillas until crispy for "chips".
    Fajita Roast/Chicken
    2-3 lbs chicken breast or beef roast
    1 green pepper, chopped
    1 onion, chopped
    1 can diced tomatoes, drained
    1 can rotel tomatoes with juice
    1 pkg taco seasoning

    Place all ingredients in crockpot and stir. Cook 5-6 hours on high or 8-10 on low. Shred meat when done and return to pot.

    Sure! Pick up a packet of McCormick reduced sodium chili mix. Brown a lb of 93/7 turkey and throw it in with a can of diced tomatoes and a can of beans. I used no salt added tomatoes and reduced sodium beans, usually Bush's black or kidney beans. Let it cook on low or even warm all day. For an extra kick, I sprinkle chipotle flakes on mine. Really does a lot for the flavor. You can tweak the ingredients however you like to adjust the saltiness. The recipe calculator is handy for this. As outlined above, a 2 cup serving is about 440mg of sodium.

    I've been making taco soup about every other week.

    3 cans of beans, rinsed (whatever kind you like)
    1 can of corn
    2 cans of rotel
    1 pound ground beef/turkey
    1 packet of taco seasoning
    1 packet of ranch dressing mix.

    Very easy, simple, and tasty.
