Original recipe makes 4 servingsChange Servings
4 eggs
1/4 cup canned pumpkin puree... I used more like 1/2 cup
1 teaspoon ground cinnamon... Pumpkin pie spice can be used here if you wish
1 pinch ground nutmeg
8 slices whole wheat bread
2 teaspoons butter

Beat the eggs, pumpkin puree, cinnamon, and nutmeg together in a bowl. Dip the bread slices into the pumpkin mixture until coated on both sides.
Melt 1 teaspoon of butter in a large skillet over medium-high heat. Place 4 of the bread slices into the skillet and cook until browned on both sides, about 3 minutes per side. Repeat with the remaining bread and butter.

    Absolutely. FANTASTIC WITH WARM CINNAMON SYRUP... (Just mix syrup with cinnamon and blend well or purchaser cinnamon flavored syrup..

    Ok I'm not sure how you got in my head but it seems you did, now I can't stop thinking about pumpkin french toast. I was just creating a recipe in my head this afternoon. LOL

    Thanks for putting my idea into words, I'll definitely be making my own version which mentally looks to be very similar but I'll be adding some pecans or granola to the finished product.

    You have to try the cinnamon syrup with this.. I can make my husband do ANYTHING.... when I promise to make these.. LOL
