Options
Here's a suggestion for a meal:
.5 lb mushrooms (about 50 calories)
1 medium peach (about 40 calories)
1-2 tbsp balsamic vinegar (20-40 calories estimate)
1 ounce blue cheese (crumbled) or brunost (sliced thinly). (120 estimate)
1 hearty chunk of rustic bread or 1 flatbread.
1. If you're using button mushrooms, skewer them whole. Otherwise, brush the portebello top (or the sides of the unstated mushroom variety) with balsamic vinegar and lay them on the unheated grill. Slice the peach and toss it with balsamic vinegar, then put it on the grill.
2. Grill on medium-high heat until evenly charred.
3. Serve with cheese atop bread or sandwich style.
Provided that the bread is under 250 calories, it will be less than 500 calories. You can even omit the bread for a total calorie count of 250 and instead serve it atop a portebello cap or in a salad.
