Low Fat Banana Bread

A wonderful banana bread that is lower in fat and calories than most other banana bread recipes.

Ingredients

155g (2/3 cup) caster sugar
60g butter, softened (or use apple sauce for an even lower fat option)
2 eggs (use just egg whites for an even lower fat option)
3 tablespoons water
3 very ripe bananas, mashed
220g (1¾ cups) plain flour
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
1/4 teaspoon baking powder

Preparation method
1. Preheat oven to 180 C. Line a loaf pan with baking paper.

2. In a medium bowl, beat the sugar and butter until smooth and creamy. Beat in the eggs, water and bananas until well blended.

3. Mix in the flour, bicarbonate of soda, salt and baking powder until the mixture is just moistened. Be sure to scrape the sides of the bowl to blend all ingredients.

4. Pour into prepared pan. Bake in preheated oven for about 1 hour. Bread is done when the top is firm to the touch and a golden brown colour. Time will vary according to loaf size and oven type.

5. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from the pan and let cool on a wire rack.

    There are some great converters out there. Just google what converter you need, for eg, kilos to pounds or Celsius to Fahrenheit. :bigsmile:

    Caster sugar is extra-fine or super fine granulated white sugar. Normal white or brown sugar is ok to use in this recipe if needed.
    Caster sugar dissolves quickly due to the fact it is so fine. I think it is sold as superfine sugar in the USA.
