Curried Shirataki Noodles

Ingredients: (I encourage you to experiment with different veggies and proportions. I was just trying to use what I had.)
- 1 packet shirataki noodles, drained and rinsed, patted dry
- 200g onion, sliced thinly (red or white, doesn't matter)
- 100g roma tomato, diced
- about 225g mushrooms, washed thoroughly then sliced (or however many you have available)
- cooking spray
- 1 tbsp chicken tandoori seasoning
- 1 tsp turmeric powder
- 1/2 tsp garlic
- 1/4 tsp salt
- a nice dash of sriracha
1. In a large skillet, sprayed lightly with cooking spray, saute onions and mushrooms until soft. Sprinkle with salt while cooking
2. While they're cooking, microwave shirataki noodles for 2 minutes
3. Add seasonings, tomato, and shirataki noodles to skillet, cook on medium heat for 10 minutes, stirring occasionally. With the edge of your spatula, slice the noodles several times (they tend to be one large bunch if you don't separate them.)
4. Enjoy.

Okay, admittedly, I didn't mark down the time or pay attention to the heat I cooked it at. So cook it until you feel it's done; for me it was when the noodles had absorbed the sauce. Calorie count came up to 190. Of course, depending on the amounts of ingredients you use and what kind of ingredients, it will vary.

    HereLiWe - How were you able to upload the photo? I have a great recipe to share and a photo, but when I tried to upload it earlier it only uploaded the words - no photo.

    First I uploaded the image to my photo bucket account, then copied the direct link of the image by right-clicking on the image on the photobucket page and pressing "copy." I then wrote it like: [ i m g ] copy url here [ / i m g ]. Do not put any spaces though, not between the brackets, not in the url code. Simply IMG between brackets, no spaces.
