I LOVE sweet (bell) peppers and eat a ton of them. Tonight I was preparing two of them for dinner and as usual, removed the seeds and pith before eating. As I was doing it, I suddenly why I was throwing that part of them away....
So my question is, does anyone have any recipes or suggestions as to things I can do with pepper seeds in order to make them edible? Google was useless when I tried, though it did reassure me that they *are* edible, but quite bitter.

I was wondering the same thing today. Only thing I found was one blog where a person claimed to try roasting pepper seeds with a bit oil to soften them.0

I'm not sure how much nutrition lies in those little seeds, but I suppose you could toss them in a smoothie or mix them into a savory dish where the bitter flavor is masked. Aside from the stray seed or two, I find the seeds too bitter to eat straight up (though some do). I read somewhere on the web that you can let them dry and then sprinkle them outside for the birds.0
