No perservatives and processed

Can anyone tell me how an food item have no persevatives and be processed at the same time? Thanks in advance for any light you can shed on this matter.

    Jam made from just sugar and fruit has been processed but doesn't contain preservatives. Same goes for fish that has been smoked the natural way. Any food that has been made has undergone some sort of process but it doesn't necessarily contain additives, colourings or preservatives.

    A food is processed when humans have done something to it to alter it in some way. In general I'm trying to stay away from processed food, but in my opinon, not all processing is equal. For example, the oatmeal we eat has been lightly processed to get it in the form in which we eat it, but that's nothing like what they do to sugar cane to get table sugar - chemicals and a very long crazy process is involved! The more processed something is, the more I try to avoid it.

    Preservatives are simply an ingredient that makes the food last longer, be more shelf-stable, not require refrigeration, etc. Many processed foods have preservatives, but not all do.
