Alternative Dinner Ideas?

Hi,

I'm really trying to be as committed as I can to changing my diet.

With that in mind I'm hoping you might be able to help with meal ideas, here's where I get fussy, I don't eat fish - it's not that I haven't tried it before I have several times and nothing I have tried makes me like it.

I'm doing well with lean meats, chicken, turkey, lean steak and I love my veggies.

Anyone have any suggestions as to whats worth trying?

  • What about Chicken Fajitas? Its a favourite in our house:-

    Chicken, Peppers, Onion, Tortilla Wraps and Salsa = Very yummy :)

    I don't eat fish either, but I eat a great wide variety of things for dinner - a kindred spirit!

    I'm assuming you're tired of doing "dinner = meat + side of steamed veggies"? Are you looking for recipes for casseroles, soups, crock pot recipes? How much cooking effort are your looking to put in?

    Personally, I do all my cooking on Sundays and reheat throughout the week so I always make at least one soup dish (especially now that it's cooling off outside). I also make my own bread rolls to go with the soup, but that's only because I enjoy baking and a good rye bread with potato leek soup is amazing :).

    I turned cooking into a legit hobby. This was a mental change for me because I find it easier to stay committed when I get to eat seriously amazing food all the time (and with proper planning, you can make amazing healthy food! and you won't mind doing it if it's a hobby :))

    Jambalaya is a good one too that doesn't take a lot of effort, makes a lot, and reheats extremely well. You can look up a recipe or get one off the rice box. We use sausage instead of shrimp in ours and it's awesome.

    Just count all the calories and portion it out. It's flavorful and full of good stuff!
  • Oooo what about beef stew...we have it every Sunday in the winter so easy to prep and healthy :)

    You can add as many veggies as you like then :)

    try this guy out. It reheats well, and it's delicious. It's got a unique flavor to it that I can't quite describe, but everyone that's tried it so far asked me for the recipe.

    - I do mine in a slow cooker so I put it on high

    - Brown the beef in a pan with a few sprays of fry light

    - Put the beef in the slow cooker and add any veggies you fancy roughly chopped

    - Gradually stir in 600ml hot water

    - Leave on high for 20 minutes then turn down to medium (Approx. 6-8 hours)

    - Sweat some red or white onion (chopped)

    - Cook chopped leek (if you want leek)

    - Add the onion and leek to the slow cooker

    - Mix beef gravy granules in - not sure how much = I just do it until I like the texture

    - And serve - We have mash potato or a crusty roll :)

    It you use a pan on a hob do the same but it only takes approx. 2-4 hours :)

    I'm not very good at explaining recipes etc...I will never write a cook book haha
  • I'm gone a lot of the day so anything that reheats well sounds good.

    I can turn my hand to anything, I love doing anything in the oven....mainly because I can get a load of other house work done while I'm waiting.

    Not a huge fan of croc pots but l am happy to give anything a go if it sounds like it could be tasty.
