high calorie snack

I have been eating 1200 cal for 2.5 weeks now lost 1 whole pound! I have PT 2 times a week and then 4 days I do cardio 30-45 minutes a day. According to my heart rate monitor PT days are 700+ calories burned and cardio 375ish.
I have come to think I need more calories. Right now I have a good flow on my food. I don't have a craving to eat more, but I know I need more calories (I think). I was going to up it to 1500 a day - I re did my goals my activity in the day. After reading the forums (I am 5'11, 202lbs ) and have a 1 year old (so working off that weight) I think it might be too low.
Anyway, l was thinking add wheat germ (which I dont mind) to my oatmeal in the AM and maybe to my proten shake at night. That would add about 120 calories. I need to find something (besides nuts) to add to my meals. Ideas? and pros or cons on the wheat germ?
