Squash boats!
• 4 Delicata squash(es), halved and de-seeded
• 1/2c uncooked quinoa (I used half white & half red, looks pretty)
• 1 can of black beans, drained & rinsed
• kernels from 2 ears of fresh sweet corn
• half an onion, diced smallish
• 1/2c salsa
• cumin/salt/pepper/garlic powder to taste
1. Brush the squash halves with a little oil and bake in the oven (cut side down) for ~10-15m at 400º.
2. Cook the 1/2c quinoa in 1c liquid (chicken stock, veg stock, water, whatever you like). Once done, mix in with the other veggies.
3. Flip the squashes and load the boats with ~1/2c of the filling.
4. Bake for another 30-40m, til a knife easily goes through the squash.
Yum, and only about 150 calories per boat!
Bake with cheese on top, or add a splot of sour cream before serving, whatever works!
