I have made a beef szechuan chilli for dinner today, but want to make homemade fries.
I haven't a clue how to calculate calories though. i can weigh the cut potatoes first, and work out their calories, but how do i work out how much more calories is added due to deep frying??

You could always measure the oil before you cook them - and again after they're cooked, and calculate in the difference.

I use canola oil so that it is at least a healthy fat that doesn't add an overwhelming flavor like olive oil and then count a tablespoon of oil for every 1/2 cup serving. I also drain mine on paper towels and literally squeeze some of the oil out with paper towels over the top too to get some of the fat back out. I got this amount by measuring my oil before and after and dividing by how many servings of fries that were cooked in it and then doubling it to make sure I counted all my calories without underestimating. But that was back when I was anal retentive about my calories. Now, I just count what I counted back then and don't measure out my oil anymore. :blushing:

This is exactly what I do and my family loves them. They prefer them over deep fried potatoes.

Why not try baking them this time to see if they like it first. You might be surprised. They might not need to watch calories but it's much heathier for them.
