    on a thread last night someone was saying that they mixed 1 can of pumpkin with 1 box of chocolate cake mix and made 12 big muffins from that.

    I'm going to try it this weekend.

    Apparently it's really good and not too pumpkiny.

    BANANA BLUEBERRY MUFFINS
    I make this ALL the time. Packed with fruit, the kids LOVE it, and it's pretty healthy! And a snap to make (and egg and dairy free - we are allergic at my house).

    Preheat oven to 350 degrees
    Line muffin tin with paper liners

    (No beaters needed, just a wooden spoon, bowl, and fork to mash the bananas...)

    1 cup of mashed banana
    ... then add...
    1/4 cup of Olive Oil or any healthy oil that can be heated
    1 tablespoon vanilla extract
    ... stir it up, then add...
    1/2 cup of sugar or Splenda or organic date or can sugar
    ... stir it up, then add...
    1 cup whole wheat flour
    1/2 cup of oatmeal
    1 teaspoon of baking soda
    2 teaspoons of baking poweder
    ... fold dry into wet and then add...
    1 cup of blueberries (frozen or fresh)

    Bake for 15-20 minutes or until done! Fork should come out clean, and edges be lightly browned.

    140 calories if you make 12 muffins
    70 calories if you make mini muffins

    It is listed in the foods as "Amanda's Eggless Banana Muffins" although I'm not sure if everyone can access my foods????

    I hope you like them! I keep them on had pretty much all the time, so the kids have a homemade, preservative free treat! If you are ever short on banana to make the full cup, I just top up with apple sauce.

    I like Krusteaz Fat Free Cranberry Orange. It has a small can of real cranberries in the box. Very easy and yummy. The box makes 11 muffins with 140 calories.

    I love the new Fiber One Apple Cinnamon muffins. I take the box of mix and instead of using oil and eggs I put in 1 cup of lite applesauce. I get about 18 muffins and they are just under 100 cal each. Yummy!! I have also made them using a bananas instead of applesauce.

    I also used to subsitute All Bran for some of the flour (can't now b/c my kids are allergic to barley, and most of those high bran cereals have malt), and that made them really filling, fibrous, and delish! I used to eat them all the time when I was at my ideal weight, after school and before the gym (I was a school teacher).

    I'm glad you liked them! Sometimes without eggs the texture is a bit off, but I found these to be pretty good!

    You can also use a box of spice cake mix, delicious! I just took my last ones out of the oven, they make the house smell great too!
