Favorite Pumpkin Recipes

I have a huge can of yummy pumpkin puree in my pantry just waiting for me to open it up. I have some free time this afternoon to bake, so I'd love to hear what everyone likes to make with pumpkin. I'm looking for a low cal muffin recipe so I can have a fall-themed snack throughout the rest of the week. Thanks and let's get this party started!

I haven't tried it but it's the next bread recipe i'll be making, i'm excited to try it out.

I tried her morning glory carrott and coconut muffin, it's one of the best muffin I ever made.
I also tried her zucchini and banana muffin, which I liked but not as much.

I made these (using Vega Vanilla Chai protein powder). Pretty tasty, they really stick to muffin liners though so I'd bake without next time. I may also try without the protein powder next time
