and 4 x 28g of any cheese such as cheddar or mature etc
how to cook:
first of all cook the cous cous
whilst this is cooking beat 2 eggs in a seperate pot and put aside for later on
grate the cheese into a seperate bowl and put a side till later on
when the cous cous is cooked stir in the full put of low fat cottage cheese
then pour in the 2 beaten eggs and mix all together. (all three mixtures should be well stared)
Now pour the entire mixture into an oven proof dish and now add the grated cheese on top across the whole mixture.
Put in the oven untill cheese is melted and started to crisp. Check the mixture has bound together and serve with salad to finish
I love it, its really filling, I normally have two servings on it!!

I have a great recipe for a vegan quiche. Tastes amazing- very savoury. The version listed here serves 8, with 188 calories per serving (16 carbs, 10 fat, 8 protein).
Ingredients:
1 tenderflake deep dish pie shell
1 block firm tofu (drain well), crumbled
1 tsp olive oil
1/2 tbsp tahini (sesami paste)
1/2 leek (white portion), diced
1/4 medium-sized white onion, diced
4 or 5 sundried tomatoes in oil (first reconstitute in water if you use dried ones), minced
12 cremini or white button mushrooms, chopped
2 cups baby spinach leaves, loosely chopped
1 cup broccoli florets
2 tbsp lemon zest
1 tsp soy sauce
3 cloves of garlic, minced
1 tsp cumin powder
1 tsp paprika
1/2 tsp oregano
5-8 fresh basil leaves, chopped
salt and pepper to taste
Method:
Preheat oven to 400 F.
In a large frying pan over medium heat, sautee onions, and leeks in the olive oil until translucent. Add the spices, tahini, soy sauce, and sautee for 2 more minutes. Add all of the vegetables and cook down until the broccoli florets are tender. Add the crumbled tofu to the veggies and cook until heated through. Taste and season to your liking with salt & pepper.
Pour vegetable/tofu mixture into the pie crust and bake for 30-45 minutes (until the crust is browning along the top).0
