Adding new foods

One of my goals for 2011 is to add a new food to my diet every month. I'm very picky, and I can't eat raw fruits or vegetables, everything has to be cooked. So far my list includes eggplant, butternut squash and kale, but I really need some more ideas! And ways to cook them would be awesome too.

Butternut squash cut in half salt and pepper lightly, small amount of butter or what ever you use bake in oven at 350 until soft, can just add nutmeg or cinnamon to taste or remove from skin puree add vegetable or chicken stock and plain yogurt or sour cream. Stir. can use ant squash you can also add nutmeg,cinnamon,all spice or pumpkin spice0
