Grocery Shop for the week

I just got back from the grocery store and I thought I'd share what I bought for the coming week's meals!

I'd love to hear what everybody else is planning on eating this week- especially considering it's just past NYE.

kale
granny smith apples
broccoli
lemons
coconut milk
chick peas
kidney beans
soy milk
orange juice
celery
sweet potatoes
garlic, ginger, onions
white potatoes
loaf of french bread
carrots
tomatoes

peppercorns

    Monday: Soup and Sandwiches
    Tuesday: Cockpot Pizza Casserole with salad
    Wednesday: Lowfat Ranch Chicken wraps
    Thursday: Salsa Chicken with salad

    Our menu this week (tentative and subject to change):

    Monday: Pork Tenderloin with baked sweet potatoes, steamed cauliflower, broccoli and carrots
    Tuesday: broccoli cheddar quiche with potato-rutabaga crust
    Wednesday: Dinner at the in-laws
    Thursday: Chicken breasts with squash/yam casserole, spinach salad with mushrooms and apples
    Friday: homemade pizzas with pepperoni, olives, onions and hot banana peppers (treat night!)
    Saturday: Beef stew with potatoes, mushrooms and carrots
    Sunday: Spaghetti (omega and flax) with marinara, ground chicken, mushrooms and red peppers

    Let's see... I'll probably make lots of salads (maybe one with each dinner). I generally eat tuna with olive oil, carrots, and cucumbers once a week... Turkey soup... Brown rice with steamed veggies and free range chicken... Stuff like that! I generally don't have a ton of things planned out for the week but I usually have an idea of what I'm going to make. I'll probably do some black bean tostadas with lettuce and tomatoes on corn tortilla shells. Those are pretty fab. :)

    everyones weekly list sounds great. I usually don't plan ahead but since my FI is now on board with me we're going to start. Oh by the way Angel79202 please do share the recipes.

    I made my meal plan for the entire week and bought the groceries needed only for those meals. If you want to look at my diary feel free. I have a lot of recipes there instead of just a list of ingredients, so if anything sounds good to you, just send me a message and I will send you the recipe. :flowerforyou:

    My main meal plans for this week are
    today: perky turkey with citrus salad & sweet potato wedges
    Wed: Mozzarella & red pepper melts + homemade coleslaw
    Thur: Spicy bean chilli + potato wedges
    Fri: Chicken & Mushroom bake + courgettes
    Sat: Spiced lamb steaks + couscous & salad
    Sun Hungarian Goulash + jacket potato
    Mon: Cheesy pasta bake.

    This menu was planned using Slimming World principals, so I'm not too sure how things will pan out with counting calories on MFP. We shall see. But now it's lunch time so I'll go and see what's in the fridge!

    Salsa Chicken

    Ingredients

    1 lb chicken breasts (fresh or frozen)
    1 jar salsa (I used a 16 oz)
    low fat shredded mexican cheese
    Tostitos Baked Scoops
    Low Fat Sour Cream


    Directions
    Spray the slow cooker with cooking spray
    Place the chicken breasts in the crockpot.
    Pour jar of salsa over the chicken.
    Toward the end sprinkle some cheese on top
    Cook on low for 8 hours

    I serve is with a little low fat sour cream and scoops on the side

    Number of Servings: 4

    I served mine topped with a little low fat sour cream and Low fat Tostitos Scoops :-)

    Crockpot Pizza Casserole


    Ingredients

    * 1 pound Lean ground meat browned and drained
    * 3 ounces Turkey Pepperoni
    * 1 can Fat free Cream of Mushroom soup undiluted
    * 1 large Onion chopped (I omit)
    * 12 ounces Shredded parmesan cheese
    * 1 box Rigatoni pasta cooked and drained
    *2- 14 ounce Pizza or Spaghetti sauce


    Instructions

    Mix together in bowl or skillet that was used to brown the meat:

    Ground meat

    Onion

    Pizza or spaghetti sauce

    Layer in 3.5 quart crockpot: in the order given:

    Half of the meat mixture

    Half of the cooked pasta

    Half a can of the soup

    6 ounces of cheese

    Half of the pepperoni slices

    Top with any other ingredients you like such as mushrooms, olives, etc.

    Repeat layers.

    Cook on low heat for 4 hours and serve with your favorite bread and a salad.

    Crockpot Lasagna
    Ingredients:
    · 1 lb. lean ground beef
    · 1 teaspoon of garlic powder
    · 1 large jar spaghetti sauce (such as Ragu in the 1 lb. 10 ounce jar)
    · 1 package (8 ounces) no-boil lasagna noodles
    · 16 ounces shredded mozzarella cheese (low fat- 2%)
    · 1 lb. ricotta cheese (low fat)
    · 1/4 cup milk (skim)
    · 1 egg
    · 1/2 cup shredded Parmesan/Romano cheese

    Preparation:
    Brown the beef, onion, and garlic in a little oil in a frying pan. Drain off any grease.
    Add the spaghetti sauce into the browned meat mixture. Mix well.
    In a separate bowl, mix the ricotta cheese, milk, and egg. Beat until thoroughly mixed and smooth. Then mix in the mozzarella cheese and the grated cheese, so that all the cheeses are combined.
    Grease the slow cooker/Crock Pot with some vegetable shortening on the bottom and sides.
    Put about 1/4 of the meat and sauce mixture in the bottom of the slow cooker/Crock Pot. Put a layer of noodles on top of that (break or cut them if needed). Put about 1/3 of the cheese mixture on top of that. Then repeat with sauce, noodles, cheese for another 2 layers. Top with meat sauce. Cook on low for 4-6 hours or until noodles are tender.

    I love this!
    I do so much better when I have a list of meals and only buy/prepare what's on the list!!!!
    My family has a diverse amount of dietary needs, so it also makes my life soooo much easier!! I despise (and usually blow a whole days worht of calories) when 4 pm hits an I have no meal plan!!

    Sunday: homemade vegetarian Stromboli and homemade cherry cobbler
    Monday: I was sick. Husband made breakfast for dinner. Which is always a big hit!
    Tuesday: homemade marinara, w/ hot Italian sausages, pasta, grilled asparagus
    Wednesday: Mediteranean pork chops, tomatoes w/ basil & garlic olive oil, couscous
    Thursday: chicken hominy stew
    Friday: attending bday party
    Saturday: spice rubbed salmon, wild rice pilaf, grilled broccoli

    Our snack staples are:
    Yogurt
    Cheese
    Nuts and Seeds
    Fruit (try to buy in season items)
    Hummus
    Carrots
    Celery
    Cherry tomatoes
    Pretzels & Popcorn
    Peanut Butter


    And we always have a dessert night on Sundays, and a take out/eat out night on Fridays; both of which I guiltlessly partake in! But, with a family of 5, a homemade dessert goes pretty quickly!!!!!
