Cooking for one

I'm hoping out there in MFP land there will be someone, or loads of folks, who could help me find some healthy recipes for one. I love to cook, but not just for me :/

    Cook as normal

    Split into more serves and eat later.

    Or just eat more food. (that is my preferred option)

    I do the cook as usually and eat leftovers...I also use cooking for two from pillsbury.com it's a tough transition from cooking for many to cooking for one (I used to cook for all of my friends until I moved)
  • I hate trying to cook for myself...so I hardly do it. I eat a LOT of Subway sandwiches.

    I like took cook stuff like turkey spaghetti sauce or tacos meat (also with turkey but that's just me) or meatloaf. I then freeze half after cooking. I can enjoy it for a couple days without getting burnt out on it. Down the road, I have a couple more good homemade meals without the prep hassle.

    I think a big part of this is attitude as well! Some people feel like it's not worth it to cook for themselves, but I love cooking for myself. I get to make things exactly how I like them without worrying about anyone else's wants/needs and I get yummy and healthy food. Depending on what I'm making, sometimes I'll make one portion or multiple portions for the next day(s) or freeze for the future.
