Can I make cookies out of other protein bars?

I recently stumbled upon the delightful Quest Bar and how to make them into cookies (I really like the idea of having 4 warm cookies rather than a chewy protein bar). But quest is pretty pricey. I was just wondering if anyone has tried making cookies out of a less expensive protein bar? I'd also be happy to see some homemade lower carb, high protein cookie recipes.... as if my pinterest isn't full enough But mainly I was hoping for something as easy as the quest bar cookies.... break the bar into pieces and bake sort of deal. Just curious, thanks
