Is 1,900 calories too low to build muscle?

Thanks everyone for looking at my post!
I appreciate everyone having a look and need some insight as I'm beginning to do strength training/body building exercises. While I'm familiar with some from the past, I've lost quite a lot weight and now I want to focus on my muscles!
I'm using the MyFitnessPal and it's currently set for 1,900 calories. Carbs: 55% Protein: 25% Fat: 15%.
I'm 23
175 lbs. (20% body fat)
5' 9"
Male
Vegetarian (Eat as vegan as possible)
I have just started strength training for 2 weeks and have been told I am not eating enough? I want to see what the best option is for me in terms of adjusting my calorie intake and how much of the ratio should be protein based.
Examples of my protein sources are as listed so I don't get the inevitable (where do you get your protein from question)...
Vegetables
Quorn (mycoprotein)
Rice
Beans
Soy milk (only soy consumed with Sun Warrior/Orgain protein shakes)
Etc...
I don't eat out often, maybe once a week for 'Splurge Sunday' but other than that I am always preparing my own meals.
I also eat once or twice a day, it's difficult for me to consume food through out the day so I find that that be a challenge and hope that would not be an issue as long as calorie requirements are met, right?
