questions about my lifestyle and losing weight

I do have a decently active job, most days i do about 7000-8000 steps, an active day is about 1100 steps.
on that note, my fitbit says to lose a lb a week i usually need about 1700 cals per day.

there are some days (maybe about 3-4) where i only eat about 1100-1400 a day, due to me working some night shifts.

will this in any way hinder the weightloss? or does this help with kinda keeping my body guessing?

also i know it's bad, but i have 2 stomach conditions and i can't afford to get sick at work so sometimes i go a full 8 hours without eating. how bad is this for weightloss? sometimes something as simple as a granola bar will make me sick.

It is fine to go for a whole shift without eating.
The timing is not important for weight loss.
It is also probably ok to have days when you are under your goal. Some people look at their weekly average instead of their daily average.

It is ok to go a shift without eating as long as you dont feel sick or ouut of sorts from doing so. It is however important to hit your daily calorie limit because fat gain/loss happens on a hourly/daily basis and it wouldnt be good to look at a weekly total because that would be almost irrelevant. It can be very hard to eat in a busy lifestyle so I understand how it is, just do your best and forget the rest.

Many people practice this type of eating style. It's called interim fasting. What you do is fast for a period of time (16 hours, 20 hours, or whatever) and then eat within a specific window. The bigger thing is making sure you eat higher calorie foods so you can hit your calorie goal. While once in a while isn't an issue, if it's consistent, it could lead to some issues (metabolic adaptation, muscle loss, malnutrition <-- the extreme but I have seen it, hair loss, skin issues, loss of period, etc..).

i understand where you're coming from. I've been going this route for 3 years because i just can't handle being sick at work.
i don't think malnutrition will be an issue, my doctor constantly tells me how healthy i am (minus being overweight)
what i was more concerned about was the metabolic thing.

No, I wouldn't think so. Just pay attention to how you are feeling and responding, and if it seems it's not working for you (or making you sick) after a few weeks, then you can look at what to tweak.

Let I mentioned it was the extreme. But if you feel you won't have much time to eat, then eat higher calorie foods or alter the way you cook such as: add nuts, cheese, cook in olive oil, high calorie protein bars or drinks, avocado, ice cream or just got to town on a peanut butter jar <<-- And yes, I do this during a bulk as it gets hard to eat 3500 calories.
