Pumpkin ricotta pancakes - 70 calories or less, 4g protein

These are delicious! I got 22 pancakes, using a 1/4 cup serving of batter for each. They turned out 70 calories but you can decrease the calories by using skim milk or almond milk and fat free ricotta... I used 1% milk and part skim ricotta, and that includes a bit of butter for the pan...

140g flour (I used whole wheat pastry flour)
1 tsp baking powder
Pinch of salt
4 eggs
1 tsp vanilla
310g ricotta
3/4 cup milk
1 tbsp sugar
150g pumpkin (not pie mix)

Mix in a blender and cook!

    Um I use the canned stuff. I'm guessing it's cooked?
    I guess I kinda forgot the pumpkin pie spice in the list. Oops.
    And how much of that goes into it?!?

    Probably half a teaspoon or so... I eyeballed it.

    Curious, ew at the pumpkin? Or the ricotta? I like ricotta because it adds protein, makes them moist and light and you don't taste it at all. The pumpkin can be omitted and they are really good without as well.

    I don't know! I love pumpkin...I love ricotta...Maybe it's because I don't love pancakes? I wonder how a plain pumpkin pancake would be. Anyway it's pretty creative. (My Italian ex-boyfriend would have loved it. He put ricotta on everything)
