Fish Curry

This one worked out well.

6 Red Onions
Two celery Sticks
3 Carrots
i orange pepper
Ounce Curry powder
two fish stock cubes
small jar of anchovies in salt
2 cans chopped tomatoes
1 potato
1/4 Squash
500g haddock fillets
Half a cabbage chopped


Chop onions, carrots, celery and pepper and fry up in a little olive oil
seperately boil potato and squash in a pan and put through a food processor till soupy
add curry powder to the onions and fry a bit more
add anchovies and fry a bit more
mix up fish stock cubes with a pint of water and add along with tins of tomatoes.
a bit of black pepper.
Simmer for half an hour.
Add potatoe/squash paste to thicken and simmer another 1/2 hour
add haddock cubed and chopped cabbage and simmer another 10 mins.

Makes about 4-5 meals, very filling and 200 calories a meal.
