Kale is my all-time favourite vegetable.
I use it in stir fries, soups, salads, quiches, slaws, pasta dishes, as a side dish, pesto, bake it into tarts, and juice it. I even chop it up finely and use it as filler for burgers.
Kale is extremely rich in nutrients and very low in calories. It's available for cheap at farmer's markets where I live (Canada) even as the snow starts to fall, because it is so hardy.

OMG my husband and I just bought Kale for the first time last week and we have not let ourselves go without it for one day yet. I love it steamed! I also use that and spinach in all of my fruit drinks. We ran out of green leaf for my son's sandwich yesterday, i switched it to Kale and he never noticed LOL. So now he'll get Kale.0

have you ever done kale chips?
lay them on a cookie sheet and brush some oil on it, then back it for a short time.
they make a nice crunchy side to any meal.0 -
I have to eat more Kale...I did a cleanse once and it called for a bunch of kale...and i didnt mind the taste! All the things you listed are great ideas!!0

They spice really well too- add some spicy paprika for a li'l kick or else use garlic salt & vinegar... drooool0 -
Hey this is a great topic!! I'm thinking about kale as a new part of my diet and I don't know much about it. Thanks for those links!! I have to ask though, through your kale conquests, have you ever baked kale into chips to eat? (similar to a potato chip only way healthier!!) I have thought about doing that but I am nervous as to how it will turn out.0

I would like to add more Kale into our diet as well! It's really a super food. It's pretty bitter raw, but when you cook it the bitterness goes away. I love the idea for burger filler!0
