Need help with dessert recipe

My sister just invited me to a Memorial Day cookout, where (she informed me) there would be brats, chips, cheesy potatoes, pasta salad, cheeseburgers, hot dogs, and basically everything that is bad for me.

She asked me to bring a dessert. Does anybody have any good dessert recipes that I could make to kind of offset the horrible food that I'm going to be subjected to?

    Mixed cut fruit (strawberries, kiwi, blueberries, grapes, pineapple, etc.)- summery and colorful; maybe with an angel food cake to go along with it.:flowerforyou:

    mmmm strawberry shortcake is always good with angle food cake and strawberries and light dream whip :smooched:

    You read me mind! I think a sliver of angel food cake, come fresh cut strawberrys, and a light version on cool whip is in order for a scrumptious yet less guilty dessert! Now if I could only find an angel to make the cake for me! :devil: :laugh:

    I think you could lighten this up. It sounded really good and light. Maybe Light Cool Whip instead of whipping cream. I'm not sure how to lighten the crust, but I guess you don't have to eat it.

    Marshmallow Graham Dessert

    1 package (16 ounces) large marshmallows
    2 cups milk
    1-1/2 teaspoons lemon extract
    1 can (20 ounces) crushed pineapple, drained
    2 cups whipping cream, whipped
    2 cups graham cracker crumbs
    1/2 cup butter, melted

    In a heavy saucepan over low heat, melt marshmallows and milk. Remove from the heat. Cool, stirring occasionally. Stir in extract. Fold in pineapple and whipped cream. Combine cracker crumbs and butter. Press 1-1/2 cups into a greased 13-in. x 9-in. x 2-in. pan. Spread with the pineapple mixture. Sprinkle with the remaining crumb mixture. Refrigerate for 2-3 hours before serving. Yield: 12-16 servings.

    easy!!

    no-bake cheesecake!!

    2 pkgs 1/3 less fat "cream cheese" (philly brand, cause off brands are awful) folded in with a tub of thawed light cool whip.

    (id suggest making your own REAL whipping cream but who knows if that is possible to do low-cal he he he!)

    top it with berries after it chills.

    oh wait...i'm posting this late =(

    in that case, grab a lite mousse mix from safeway and 'fake' a pie ;) top with strawberries.

    that's probably even less calories...

    or make your own.

    seriously, light mousse mix from safeway (and i really hate mixes cause i love baking) is a low calorie godsend.

    you could lighten the crust by using lower-calorie graham crackers (keeblers, i think, has a cinnamon version).

    in ireland/uk they have "biscuits" for crust-making, so much easier :(

    note: when making above mentioned cheesecake, add in lemon juice, vanilla extract and perhaps powdered sugar to taste (or some pureed fruit).

    anyway.

    apple crisp is another healthier version.

    filling: apples

    simple syrup:
    1/4 cu. water
    1/4 cu. brown sugar
    over stove, bring to boil, let cool slightly.

    drizzle over apples.

    (the same process will happen in the oven but it's easier to get it mixed properly and have the right consistency if you do it this way. if you don't want to, you don't have to; just forget the water, add a little melted butter instead and the sugar will stick - up to you, but it will be a little runny without the calorie-laden flour.)

    dash of granulated sugar over that (optional).

    topping:

    plain rolled oats or
    granola

    with 2-4 tsp butter or margarine

    (until oats are just moist, but not too moist as it won't "crisp" in the oven)

    probably bake at 350 for about 30 mins, check after 25
